How would you describe Yellow Box Bakery?
The Yellow Box Bakery is our “head full of dreams”, which is realized through perseverance and resilience. Bred (pun intended) out of our passion for baking and music two years ago, it is more than just a bakery. It’s an extension of who we are. The name itself is derived from the song “Yellow” by our favorite band Coldplay.
What was your vision for the bakery?
From the beginning, we knew we wanted to incorporate the bonds that hold us together into the essence of our business. Coldplay has always been the common thread that woven our stories together and created the soundtrack for our lives. Since we both have professional careers in the culinary industry, we started Yellow Box as a side business focusing on custom cakes. In early 2020, when we were faced with the uncertainty of our future due to this pandemic, we decided to expand our offerings and come up with new ideas that we believed people would find not only alluring, but possibly some comfort and convenience could create nostalgia even in these difficult times. With the first idea of Lucy, who wanted to delve deeper into the baked goods of her Hispanic heritage and Jimmy’s love of conceptualizing, the filled Bonita Conchita was born.
Tell us about your typical flavors.
We started with three flavors based on traditional Mexican milk: chocolate milk, vanilla milk, and fresa (strawberry milk). They were well received, so we decided to continually add a Limited Time Conchita (LTO) that focuses on things that are important to us or that we love to celebrate. Some of the favorites of the past were the Chi Chi Conchita adorned with pink ribbons in support of breast cancer awareness, the red, white and green conchita filled with gold leaf arroz con leche for the month of Hispanic Heritage, and the sugar skull dulce de leche filled conchita for Dia de los Muertos. We presented a conchita filled with pumpkin cheesecake with graham cracker crumble in autumn and a peppermint cocoa conchita with candy cane crunch for Christmas time. We are currently looking forward to the release of our newest and first jelly-filled Conchita, affectionately called “Strawberry Swing”. Just in time for Valentine’s Day, it’s a strawberry conchita dipped in chocolate and sprinkled with rose dust.
Tell us about your other offers.
Apart from our Conchitas, we are expanding our family and at the same time expanding our small company. We don’t want to lose focus on being a bespoke bakery as we really enjoy working with each of our customers individually to bring the products they want from vision to reality – and always delivered in our yellow box! ¡Viva Conchita!
